Danica’s Almond Butter Brownies Recipe

My favorite podcast host, at the end of each interview, asks her guests for three of their simple joys in life.  I always enjoy hearing the guests’ answers, and each time I listen I’m inspired to appreciate my own answer to that question.  One of my simple joys in life is a gooey pan of homemade brownies.

While we make eating whole foods a priority in our home for the majority of our food, I’m also all for enjoying treats.  Food is meant to be enjoyed, and treats make my heart and mind happy.  Decadent desserts have their place, but sometimes I just feel like enjoying chocolate without experiencing any sort of sugar rush afterward.

This brownie recipe is my absolute favorite dessert – and if you know me, you know that I have a lot of beloved desserts so this means something. 🙂

For years now this has been my go-to recipe.  It’s been tinkered with and shared amongst many friends.  I hope you and your family enjoy this delicious, easy, fairly-healthful dessert.

Danica’s Almond Butter Brownies Recipe

{gluten-free, dairy-free, & paleo – just be sure your chocolate is dairy-free if this is your preference}

 

ingredients:

  • 1 cup Almond Butter
  • 1/3 cup Maple Syrup
  • 1 Egg
  • 2 tablespoons melted Coconut Oil (or butter or ghee)
  • 1 teaspoon Vanilla Extract
  • 1/3 cup Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 cup Chocolate Chips, plus a few more to sprinkle over the top

instructions:

  1. Preheat your oven to 325°F and grease a 6×8 or 8×8 baking dish with melted coconut oil, butter, or cooking spray.
  2. In a large mixing bowl, combine all of the ingredients except for the chocolate chips and stir until combined.  Then slowly stir in the 1/4 cup of chocolate chips.
  3. Pour the batter into the prepared dish, use a spatula to smooth it out, and sprinkle with a few more chocolate chips.
  4. Bake for 20-22 minutes, then let the pan cool for about 10 minutes before digging in.
  5. Enjoy!
