Sweet + Sassy Chili

Fall cooking and baking has arrived. I am so excited to share with you my all time favorite Chili Recipe! There is nothing better than a hot bowl of chili with cheese and cornbread in October! I make this recipe for football parties, hosting friends and family, work potlucks, and just a normal Wednesday dinner. It is super easy and even my kids like it.

Sweet and Sassy Chili

Yield: 10+ servings

 

Ingredients:

1 pound of hamburger

garlic cloves

1 – 2 onions (depending on size) diced.

salt + pepper

1 can baked beans

1 can (rinsed) dark kidney beans ( you can use light kidney beans too)

1 can (rinsed) white kidney beans

1 can pinto beans

1 can (rinsed) butter beans and/or northern beans

1 large can of diced or stewed tomatoes with whatever flavor you prefer

1 can (rinsed) black beans ( if you like)

1 can (rinsed) garbanzo beans

4 cups of Campbell’s tomato juice or bloody mary mix from Trader Joes

1 jar of salsa (I usually use Pace Medium salsa)

You can add in another salsa if you like too! I use what ever I have on hand. (I love a good corn salsa)

1/4 cup of brown sugar

1 T. Cinnamon

2 T. Chili Powder

1 t. Cumin

Cayenne Pepper ( I use 1/4 t. because I am a wimp)

 

Instructions:

Ground the meat with the onion/garlic. I sprinkle Salt and Pepper on it as well.

Meanwhile, have a large pot on medium heat. Start dumping in the other ingredients.

As for the beans, you can vary this recipe or not use all of them if you choose to. I use any bean I have on hand. I always figure the more you have the better it is for you.

Stir and simmer. Add the cooked meat, garlic, onions into the big pot of beans.

Once everything is in the pot, I let it simmer for 30-60 minutes. You can certainly put everything in a crockpot for the day too.

*My favorite place to buy beans and tomatoes is Trader Joes- very reasonable Organic selection.

*I have added cut up cooked pieces of bacon and put in the chili before too.

 

Toppings:

Cornbread ( I love Traders Joes)

Sour Cream

Shredded Cheddar Cheese or Feta Cheese for something different.

Crackers of your choice ( l like Saltines)

Diced Green onions
